About the Fruit:
The Kettleman Apricot is a rich, golden orange-red apricot with a beautiful, lightly floral aroma and a bit of tartness that apricot fans love. Smooth-textured and tangy-sweet, Kettlemans are named after the California town near where the variety was bred and tested.
These attributes not only result in a pleasing, classic apricot flavor - they attest to the uniqueness of our region's growing conditions. Warm days, cool nights and Sacramento-San Joaquin River Delta breezes result in a more plump, flavorful fruit than what you typically find in the grocery store.
For our apricot season, the Kettleman matures early, reaching its full size and developing a sweet, balanced flavor profile by early-to-mid May. The Kettleman is great for eating out of handhand or is an excellent apricot for slicing into salads.
Origins Of The Jam:
We've been working with our friends at Kettl for a decade with a shared passion for community, farmer relationships and ingredients. They get their caffeine free soba cha from a farm in Nagano - the city famed for its buckwheat noodles. When Kettl opened a store in Los Angeles they asked us to make their in store Matcha and Hojicha Cookies - and we suggested in swirl Sobacha Cookie with Apricot Jam. At that exact moment, Kettleman Apricots became available from Frog Hollow Farm and a collaborative jam was all but fate. We steep the Soba Cha in the Apricots for 24 hours prior to cooking to impart the buckwheat's nuttiness.
